Tips for scaling recipes well

Not all recipes scale equally. Here’s what experienced cooks know.

Use weight, not volume

A cup of flour can weigh anywhere from 100g to 170g depending on how it’s packed. For baking, always use a kitchen scale. Our tool shows gram equivalents alongside volume. Read why →

Scale leaveners carefully

Baking powder and baking soda don’t scale linearly. When multiplying by more than 2×, use only 75–80% of the calculated amount to avoid metallic bitterness. Learn more →

Cooking times don’t scale linearly

Doubling a recipe doesn’t mean double the oven time. A doubled batch typically takes 10–20% longer — trust a thermometer over the clock, not just the scaled time estimate.

Density matters for conversions

Honey is far heavier than water per cup. Select the correct ingredient name in the tool for density-accurate gram results. Use the Density Chart tab for a full reference table.

Adjust pan sizes when scaling up

A 9×13 pan has about twice the area of an 8×8. Use area ratios when switching pans. Dense batters in under-sized pans can overflow — split across multiple vessels when in doubt.

Temperature stays the same

Oven temperature generally doesn’t change when scaling. The exception: dramatically thicker items sometimes benefit from a slightly lower temperature to cook through without overbrowning.
